Apple Chai GnT
- 1.5 oz. Bluecoat American Dry Gin
- 0.75 oz. Apple Chai syrup*
- Premium tonic water
- Whole star anise
Add gin and Apple Chai syrup to a Collins glass. Fill the glass with ice and top with premium tonic water. Garnish with a dried star anise pod.
*Bring 1 quart of fresh honey crisp apple juice to a soft simmer in a small saucepan, then turn off the heat. Add in 3/4 cup of loose chai tea and let it steep for 2.5 - 3 minutes. Strain the mixture. Add equal parts per volume of demerara sugar to apple juice. Stir until the mixture is homogenous.
- 1.5 oz. Bluecoat Barrel-Finished
- 0.5 oz. honey syrup*
- 0.25 oz. Grand Marnier
- 0.25 oz. Vigo Amaro
- 0.25 oz. fresh lemon juice
- 1 whole egg
- Pumpkin beer (for topping)
Pour everything but the pumpkin beer into a shaker and shake. Add ice and shake again. Strain into a rocks glass. Top with pumpkin beer. Garnish with cinnamon and nutmeg.
*Combine equal parts honey with equal parts boiling water. Stir to dissolve honey, then let cool completely.
Chai Old Fashioned
- 2 oz. Bluecoat Barrel-Finished Gin
- 0.25 oz. chai syrup
- 4 dashes Jack's aromatic bitters
- 2 dashes Jack's black cardamom bitters
- Whole star anise pod
Add all ingredients to a mixing glass. Add ice and stir for 45 seconds. Strain over a large piece of ice in a rocks glass and garnish with a star anise pod.
*Combine 2 chai tea bags and 8 oz. of water. Cover and let rest overnight. Take tea bags out and pour tea into a blender with 1 cup of sugar. Blend on high until all sugar is dissolved. Strain through a fine mesh strainer and store in an airtight container.
